Nasi Lemak or Coconut rice is one of popular Malay cuisine that is usually eat for breakfast. The coconut rice is serves on a banana leaf with anchovies chili, hard boiled egg, fried chicken (optional), some cucumbers and fried peanuts. From where I came from, we only need this for breakfast but if you visiting other parts of Malaysia like Kuala Lumpur, you can find it all day long because seems like they eat it for breakfast, lunch and dinner. So, lets get started with the recipe.
2 cup of white rice
2 inches of ginger
half bulb of shallot
1 cup of coconut milk
Wash the rice with water 3 times, drain and put it in a rice cooker. Dice the shallot and ginger. Add it into the rice. Pour the coconut milk in the pot and stir all the ingredients very well. Add 1 cup of water or more depending on how much your rice cooker need the water. Cook the rice and stir several times during its cooking.
Anchovies chili or Sambal Ikan Bilis Recipe
300g or pre-wash small anchovies
half bulb of onion
4 tbsp of chili paste
1 inch of ginger
4 tbsp of cooking oil
Sugar and Salt for taste
Soak the anchovies in water for 10 minutes to soft it. Blend the onion, ginger, garlic and shallot. In a hot pan, pour the cooking oil and cook the blended ingredients for about 5 minutes. Make sure it cooks perfectly and turn to golden brownish. Add the chili paste and cook it for another 5-7 minutes. Cook until the oil separate from the chili paste. Add sugar and salt for taste. After that, add the soaked anchovies and cook it for several minutes. Once the anchovies cooked perfectly, it’s done.
Fried Chicken Recipe
4 pc of Chicken – any parts that you like
1 tsp of turmeric powder
1 tsp of salt
Marinate the chicken with turmeric and salt for about 5 minutes. Cook it in a frying pan until it turns golden brown.
Hard boiled eggs
cook some peanuts on oil free pan for 3-5 minutes.
A few slices of fresh cucumbers
Assemble all of our cooked items together on a banana leaf or a plate.
For breakfast, we usually eat it with a cup of hot chocolate and one portion of fruits. It is so satisfying. Bon Appetit!
