My healthy twist Ayam penyet

Ayam Penyet or smashed chicken which was originated from Indonesia, is one of the most popular Javanese cuisine. Ayam Penyet is fried chicken that is marinated in special paste and serve with rice, special sambal(chilli), delicious fried Tauhu and tempeh as well as slices of cucumber and salad. However, the original recipes is less healthy for my liking since it is using a lot of oil. So, here is my own healthy twist Ayam Penyet Recipe.

Ingredients:

chicken thighs – 2 parts

Marinade Ingredients:

shallot 2 bulbs

garlic 2 cloves

turmeric 1 inches

galangal 1 inches

Blend all the ingredients above and marinate the chicken thighs for 1 hours or more (depend on you).

After marinate the chicken, boil it in a pot of water together with all the remaining marinade, add a little bit of salt for taste. Pour a cup of low fat milk (optional). Boil until the chicken is half cook and keep the broth for later.

Tauhu and Tempeh Ingredients:

Tauhu 2 slices

Tempeh 2 slices

chicken broth 2 cup

rice flour 2tbsp

1 egg

A little bit of salt

Mix the chicken broth, rice flour, egg and salt in a bowl. Stir it very well until it forms batter. Dip the Tauhu and Tempeh slices in the batter. Line them on a baking tray. Bake at 150 degree celcius for 10 minutes.

Use the same batter, dip the boiled chicken and coat it very well. Line them on a baking tray like you did for Tauhu and Tempeh. Bake at 200 degree celcius for 20 minutes.

Sambal/ Chili ingredients:

Thai green/red chilli 5pc

Onion 1/2

tomato 1/2

garlic 1 clove

baked shrimp paste 1 tsp

Blend all the ingredients except the shrimp paste, then fried it in a little bit of olive oil until it turns to golden brown. Add the baked shrimp paste and a little bit of salt. Mix well.

Server the baked chicken, Tauhu, Tempeh, Sambal all together in a plate and voila! Our healthy twist Ayam Penyet is done! Bon Appetit!
